A few weeks ago I promised a recipe for Caesar Dressing and here it is. Now don't be put off by the anchovies. They are NECESSARY. The egg yolk may be a problem for some too but it adds richness and thickness. You may never want to go back to store-bought again.
Quick, Authentic Caesar Salad Dressing
1 egg yolk
3 T anchovy paste
¼ t salt
½-1 t pepper (to taste)
5 garlic cloves (I use the jarred kind)
2 t Dijon mustard
2 T fresh lemon juice
1 t Worcestershire sauce
2 T red wine vinegar
½ C olive oil
¼ C shredded or grated parmesan
Toss with romaine lettuce, croutons, and more shredded Parmesan cheese.
